As the leaves turn red and TVs turn on Gilmore Girls, the signs of fall are everywhere. With the season, a new wave of comfort foods and clothes becomes the top priority. A recently popular fall recipe comes from a pop icon, Taylor Swift, who gifted the world with her chai tea cookies.
Swift first shared her cookies on Instagram in 2014 with the caption, “Chai sugar cookies with cinnamon eggnog icing AKA Christmas in September.” Fans on Tumblr begged for the recipe, which Swift happily shared. It has now become a staple for Swifties (Swift’s fanbase) and others who seek to relish in the fall season.
If you are in need of a new favorite recipe or want to immerse yourself in the fall spirit, try Swift’s cookies by following this recipe.
Ingredients needed for the icing:
- 1 and ½ cups of powdered sugar
- 2 tablespoons milk or eggnog
- ¼ teaspoon nutmeg
- ¼ teaspoon cinnamon
Ingredients needed for the cookie:
- ½ cup unsalted butter (warmed to room temperature)
- ½ cup vegetable oil
- ½ cup granulated sugar
- ½ cup powdered sugar
- 2 cups flour
- 2 teaspoons vanilla extract
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 egg
- 1 chai tea bag
Step 1: The Beginning
First, whisk the butter until it becomes fluffy. While doing this, add the oil and mix until the ingredients are combined. Then, add the sugar, powdered sugar, egg, and vanilla extract into the butter and oil mixture. At this point, cut open the chai tea bag and add the leaves.
Step 2: The Dough
Mix the flour, baking soda, and salt into the completed mixture from the first step. When done, the mixture should be firm. Then, place into a fridge to cool for about an hour.
Step 3: The Oven
Preheat the oven to 350 degrees Fahrenheit. Next, remove the dough from the fridge and roll it into small spheres. You can use an ice cream scoop to make them more even. Then, flatten them with the back of a spoon. Bake the cookies for about eight to 12 minutes until golden brown. Let them cool for about 15 minutes.
Step 4: The Icing
While the cookies cool, whisk powdered sugar, cinnamon, nutmeg, and either milk or eggnog in a bowl to create the icing. Then, drizzle them on top of the cooled cookies and wait 10 minutes for it to set.
